The practice of mindfulness in the most mundane tasks of the everyday opens my eyes, even to the washing of vegetables for a salad. Stalks of kale rinsed and placed in a colander to drain, beads of water amongst the veins and spine of the leaf magnify the beauty that is.

I was just reading an article that says it is good in moderation, some people overdoing it with the juicing thing are coming up with hypothyroid problems.

As old as I am, I’m embarrassed to say this is the first time I’ve used kale. I’m in love with it visually and to eat too. Delicious in this salad I made. Give it a try.
