Quesadillas on the beach in Sayulita, Mexico. Shrimp quesadillas to be exact. I have never tasted a quesadilla so scrumptious. Was it the sweet local shrimp? The light ocean breeze? Sitting under a beach umbrella that was filtering the sun upon our heads? Our toes in the sand? No matter, believe me, those quesadillas were better than good.

Wow, we have dear friends who live in Sayulita – they moved there 5+ years ago after getting married overlooking the ocean at Villa Amor. They just had their second baby (a girl) and seem to have found their own similar juicy quesadilla of life in Sayulita. 🙂
